Our meat, both beef and pork, is locally raised and butchered. Our premium beef or pork products will be a welcome addition to your grill and dinner table!

May through October we are at the Portage Farmer’s Market on Thursdays from Noon to 5pm. During the winter months, we sell individual cuts of beef and pork right off the farm on Tuesday afternoons from 4pm to 6pm. Occasionally we attend other local markets or events with our meats, including regular Pop-Up stand dates at the Edgewater Greenhouse in Portage. Our beef can also be purchased as a whole beef, half, or quarter per pound at $3.05 per pound hanging weight plus the cost of processing. Most of our beef quarters are around 225 lbs. Deposits for quarters of beef can be made at our online store when they are available.

Our pork can only be purchased by the cut at this time, but we occasionally have extra pork available for purchase as a half or whole hog. Check in with us if you are interested in purchasing bulk pork.

Our beef are raised on pasture most of the year, eating a wide variety of grasses and legumes. We do feed some corn to our beef throughout the year, usually in the form of corn silage (a fermented whole corn plant product) and feed hay throughout the winter months. Our livestock are humanely raised and our farm is certified through the national F.A.R.M. program.  

What does per pound (market value) hanging weight plus the cost of processing mean?

Our livestock animals are butchered at the Baraboo Meat Market and the beef are aged in their coolers for two weeks for optimum flavor and tenderness. While hanging in their coolers they record the weight for us so we know how much meat is available.

For example, most of our quarters of beef weigh around 200 pounds (or 400 lbs for a half, or 800 lbs for a whole beef). Out of a 200 pound quarter of beef you will end up with about 125 pounds of steaks, roasts, ground beef, etc. to put in your freezer. Each quarter can be cut to you desired specifications. Do you prefer NY Strip Steaks over T-Bones or Porterhouses? Great! We can do that! Are you looking for some brisket, ribs, and oxtail to slow cook in your smoker? We can do that too! We are happy to work with each customer to get you the cuts that you want. Or, if you prefer can provide you with our suggested cuts specifications.

The cost of the beef per pound hanging weight is paid to us at Lewiston Farmstead Meats. The processing cost, however, is paid directly to the Baraboo Meat Market when you pick up your frozen beef from them. Your processing cost can vary a little depending on your cut specifications but the basic cost starts at $0.75 per pound.
